It is available in every restaurant serving home-style food across Iraq, from Erbil in the north to Najaf, Karbala, and the south.
Amber rice is famous for its strong, pleasant aroma. Okra stew (Margah Bamia) is the king of summer stews. 'Hkakah' (crispy rice from the bottom of the pot) is the most contested part in the family.
