Kahi and Geymar represent the ultimate indulgence in Iraqi breakfast, a combination of crispy, flaky Kahi pastry and rich Iraqi Geymar made from buffalo milk.
Kahi (layered pastry), Geymar (authentic Iraqi clotted cream), honey or simple syrup, and pistachios.
A social ritual expressing joy and celebration, it is the primary traditional breakfast on holiday mornings and for newlyweds. Geymar is particularly linked to the marshes and southern Iraq.
Abu Ghraib, Sadr City, and Kadhimiya in Baghdad are famous for the best Geymar. Shops are crowded early in the morning in all cities.
Geymar 'Al-Sadda' is considered the finest in Iraq. Authentic Geymar is made exclusively from buffalo milk for its high fat content. Heavy cardamom tea is the preferred accompaniment.
