Tashreeb is a rich broth (red or yellow) poured over pieces of Iraqi bread until fully saturated. It is considered the most intimate and simple comfort dish in Iraqi cuisine.
Iraqi bread (Tannour), lamb or chicken, onions, boiled chickpeas, Loomi Basra (dried lime), and tomato paste or turmeric.
It is the primary 'comfort food' for Iraqis, especially in winter. It is the main dish on the Iftar table during Ramadan, bringing the family together around one large tray.
You can find Tashreeb in all Iraqi homes and in popular restaurants specializing in Pacha and Tashreeb in Baghdad.
The word 'Tashreeb' is derived from the verb 'to drink,' meaning the bread drinks the broth. Loomi Basra is the magical ingredient that gives Tashreeb its characteristic sourness and deep flavor.
